I’ve chosen to start this blog with the Seafood Paella, because, my interest in making this dish marked the beginning of when I started getting serious about pursuing gourmet cooking as a hobby.

In my opinion, Paella is the king of rice dishes. The presentation is a deliciously appealing sight to behold, and the amalgam of flavors and aromas from all of the ingredients get absorbed into the rice, making every bite feel like a party in your mouth.
